Lamb Chops with Lemon and Oregano
Perfectly grilled lamb chops marinated in the classic Greek trinity of olive oil, lemon, and oregano.

8 lamb rib chops
1/2 cup olive oil
Juice of 2 lemons
6 cloves garlic, minced
2 tbsp dried oregano
1 tbsp fresh rosemary, chopped
1 tsp salt
1/2 tsp black pepper

Instructions
1. Combine olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper in a bowl.
2. Place lamb chops in a shallow dish. Pour marinade over, turning to coat. Cover and refrigerate 2-4 hours.
3. Remove chops from refrigerator 30 minutes before cooking.
4. Heat grill or grill pan to high heat.
5. Remove chops from marinade, shaking off excess. Grill 3-4 minutes per side for medium-rare.
6. Let rest 5 minutes before serving.
7. Serve immediately with fresh lemon wedges and Greek lemon potatoes.
