This modern twist on classic saganaki adds a drizzle of honey and a sprinkle of sesame seeds to the pan-fried cheese, creating an irresistible combination of salty, sweet, and nutty flavors. It's become incredibly popular in contemporary Greek tavernas.

We use graviera cheese from Crete for this version - it has a slightly sweeter, nuttier flavor than kefalotyri that pairs beautifully with honey. The cheese is dredged in flour and fried until golden and molten inside, then immediately topped with warm thyme honey and toasted sesame seeds.

The contrast of crispy, salty cheese with sweet floral honey is addictive. Eat it quickly, while the cheese is still stretching and the honey is pooling - saganaki waits for no one. This dish perfectly represents modern Greek cuisine: respecting traditions while adding creative touches.

Ingredients

300g graviera or kefalotyri cheese
1/4 cup all-purpose flour
2 tbsp olive oil
2 tbsp butter
3 tbsp Greek thyme honey
2 tbsp sesame seeds, lightly toasted
Freshly ground black pepper
Pita bread or crackers for serving

Instructions

1. Cut cheese into slices about 1cm thick.

2. Briefly dip cheese in cold water, then dredge in flour, shaking off excess.

3. Heat olive oil and butter in a small heavy skillet over medium-high heat until butter foams.

4. Add cheese and fry 2-3 minutes per side until golden brown and crusty.

5. Transfer to a serving plate immediately.

6. Drizzle generously with honey while cheese is still hot.

7. Sprinkle with toasted sesame seeds and freshly ground black pepper.

8. Serve immediately while cheese is still molten. Eat with pita bread.
