Tzatziki is the ultimate Greek condiment - cool, creamy, and utterly addictive. At Lauer House, we make our tzatziki fresh daily using thick, strained Greek yogurt as the base, giving it that characteristic rich, tangy flavor that sets authentic tzatziki apart from imitations.

The secret to great tzatziki lies in the preparation. We grate fresh cucumbers and salt them to draw out excess moisture, then squeeze them dry before folding them into the yogurt. This ensures our tzatziki is never watery, always perfectly thick and creamy. Fresh garlic is minced finely and added along with a drizzle of extra virgin olive oil and a whisper of white wine vinegar.

The finishing touch is fresh dill, which adds an aromatic herbaceous note that complements the coolness of the cucumber and the sharpness of the garlic. Perfect with grilled meats, as a dip for warm pita bread, or simply enjoyed by the spoonful - our tzatziki is a taste of pure Greek summer.

Ingredients

500g thick Greek yogurt
1 large cucumber
4 cloves garlic, minced
2 tbsp extra virgin olive oil
1 tbsp white wine vinegar
1 tbsp fresh dill, chopped
Salt to taste

Instructions

1. Grate cucumber and squeeze out all excess water using a clean cloth.

2. Mix yogurt with pressed garlic.

3. Add drained cucumber, olive oil, and vinegar.

4. Stir in fresh dill.

5. Season with salt.

6. Refrigerate for at least 1 hour before serving.

7. Drizzle with olive oil before serving.
