1kg pork shoulder, thinly sliced
4 cloves garlic, minced
2 tbsp olive oil
1 tbsp dried oregano
1 tsp paprika
1 tsp cumin
1/2 tsp allspice
1 tsp salt
1/2 tsp black pepper
For serving:
4 pita breads
Tzatziki sauce
2 tomatoes, sliced
1 red onion, sliced
Paprika for garnish

Instructions
1. Combine garlic, olive oil, oregano, paprika, cumin, allspice, salt, and pepper to make a marinade.
2. Coat pork slices in marinade. Refrigerate at least 4 hours or overnight.
3. Thread meat onto a vertical rotisserie spit, pressing tightly together. Alternatively, stack in a loaf shape on a baking sheet.
4. Cook on rotisserie (or bake at 180°C) until meat is cooked through and edges are crispy, about 1.5 hours.
5. Shave thin slices from the outer crispy layer.
6. Warm pita breads. Fill with gyros meat, tzatziki, tomatoes, and onions. Sprinkle with paprika.
7. Roll up and serve immediately.
