Our souvlaki starts with carefully selected cuts of pork shoulder, cubed and marinated overnight in a blend of olive oil, lemon juice, garlic, and Mediterranean herbs that have been perfected over generations.
The magic happens on our charcoal grill, where the skewers are cooked slowly, turned frequently to ensure even caramelization and that irresistible smoky char. 1kg pork shoulder, cubed
4 tbsp olive oil
Juice of 2 lemons
4 cloves garlic, minced
2 tsp dried oregano
1 tsp paprika
Salt and pepper

Instructions
1. Cut pork into 2cm cubes.
2. Mix olive oil, lemon juice, garlic, oregano, paprika, salt and pepper.
3. Marinate pork for at least 2 hours, preferably overnight.
4. Thread meat onto soaked wooden skewers.
5. Grill over high heat for 10-12 minutes, turning regularly.
6. Let rest for 2 minutes before serving.
7. Serve in warm pita with tzatziki, tomatoes, and onions.
